Wayne’s Smoke Shack – Superior

I was wandering around Superior looking for a place to eat after my Eldorado Canyon Hike when I saw a sign that drew me like a moth to a flame. While I am not from Texas, my Aunt and Uncle still live down there and their two daughters live near me now and have trained me that if you see a sign that says Texas BBQ, you go.

Well trusting the Texas portion of the FatMan LittleTrail fan club definitely worked out well today.

Wayne’s Smoke Shack is in a shopping center and when I pulled up the first thing I noticed after the sign was the line stretching out the door so I figured we were going to be OK. The way it works at Wayne’s is you order your food and they charge by the pound. So if you want 2 slices of brisket, or 2 ribs, they will slice it and place it on a scale and that is how much they charge. They also have a full compliment of sides (full menu)

I went with 2 slices of brisket, which came to a half pound and one of the Wagyu Beef Sausages and the green beans with pork belly as the side.

I eat a lot of BBQ but I think I am going to have to say this is one of the best that I have ever had. With the brisket they give you the option of “moist” or “drier” with the moist being with more fat. That’s what I got and I have to say it was amazing. The brisket was melt in your mouth good. The fat was rendered perfectly so it didn’t have any of that rubbery feel to it but it helped flavor the meat so well.

The sausage was also really good although I could have gone for a little bit more spice in it to give it a little bit of heat. I do like a bit of spice to my food though. The green beans were also really good and just a really nice southern style with the pork belly.

The true test was that I got some sides of sauce but barely used it. The meat was so good it didn’t need any of the sauce!

One thing to keep in mind is the pricing. Paying by the pound can add up really quickly if you aren’t careful. The sides at $3 are a good deal but that meat can add up quick!

I was really impressed and this was some of the best brisket I have ever had, close second behind cousin Gregg’s I think. If you find yourself in Superior you should give them a shot.
