After my hike to Chief Mountain I was looking for a place to eat and since I was already close to Idaho Springs, I figured I would make the voyage to the iconic Colorado pizza joint…Beau Jo’s.
You could arguably say that Beau Jo’s is the most famous mountain pizza in the state. When I first moved here it was what everyone talked about. Now there are several locations but I had to go to the original to make it official.

The old building on Miner Street in downtown Idaho Springs was built in 1880 according the Beau Jo’s website. They started making pizza in 1973 and haven’t looked back since. It is often duplicated but if you want the original Colorado Mountain pizza there is only one place to go.
The Food
Enough of the history, time for the food! It was absolutely freezing the day I went to visit and I needed to warm up quick so I decided on an appetizer. I went with the Baked Stuffed Mushroom. The large mushrooms came covered with cheese and spices and were absolutely delicious. If I had any idea there would be so many I probably could have just had this as a meal.

Next up though was the pizza. I went with Motherlode which is apparently the mountain way to say meat lovers. The Motherlode comes with salami, pepperoni, meatballs, bacon, Italian sausage, Canadian bacon, mozzarella cheese. I probably should have asked for a defibrillator as well!
I’m not going to lie this was a delicious pie. The meats were all super fresh and cooked to perfection. I mean lets be honest, what is the Fatman going to say bad about a pizza that is full of meats!

Now the best part of Beau Jo’s is the rolled up crust on the end. And any time you have a lot of crust you have to dip it in something right? Well they do one better at Beau Jo’s with a bottle of honey to put on the crust, or the pizza I guess. This is just such a great treat to add the sweet of the honey to saltiness of the pizza and really ads to the whole experience.

Finding Beau Jo’s
There are seven locations of Beau Jo’s but if you are looking for the original it is located at 1517 Miner St in Idaho Springs. They open up at 11 am everyday so if you find yourself stuck in I-70 traffic or coming back from a hike you might want to stop and give them a shot.
