Wecks
After my sunrise hike at Sun Mountain on the Great Southwestern Road Trip, I was looking for some good breakfast. I didn’t know much about Santa Fe but found myself at a place called Weck’s. Weck’s turned out to be part of a local chain in New Mexico with 15 spots around the state. It turned out to be a great place to replenish and recharge for the day ahead.
The Food
Weck’s has a nice large breakfast menu and they are home of the “Full Belly Omelettes” so I knew I was in the right place. They had so many options I couldn’t choose so I asked my server what she thought. She told me that the huevos rancheros were very popular so I thought I would give them a shot!
The huevos rancheros were two eggs any style atop two corn tortillas, hash browns, red or green chili and topped with cheddar and jack cheeses.

I got mine with the green chili and that was the first thing I noticed. There was an amazing spice to the chili and it got my nose running and I loved it. So often the chili is pretty mild but not at Weck’s! The beans were also delicious and mixed into the hash browns they created a mass of carbtastic goodness. The corn tortillas made for a nice base for the eggs and to keep everything together. I really liked this but couldn’t get over how much I really loved the spicy chili!
Finding Weck’s
While Weck’s has locations in 8 cities in New Mexico, the one in Santa Fe is at 2000 Cerrillos Rd. They are open from 6:30-2pm everyday and serve breakfast and lunch. If you find yourself in New Mexico give Weck’s a shot! And make sure to order the green chili!
