Mary Murphy Steakhouse
After finishing up the Narrow Gauge Trail I decided to see what I could find around Nathrop, Colorado. What I found a beautiful and cool 140 year old mountainside complex called the Mount Princeton Hot Springs Resort. And inside the resort was the Mary Murphy Steakhouse.
The resort has several hot springs fed pools, a hotel, restaurant, and conference center all on some of the most lovely grounds around.

I wasn’t sure if they had a stand alone restaurant at first but decided to give it a shot and was delighted to see that they did. And a real nice one at that! The restaurant had some outdoor seating which was a perfect setting for lunch on a fall day.
The Food
Now to the important part…the food! I went with a decidedly more healthy approach than I usually do. I started out with a side salad. The salad was good. It came with lettuce, tomato, carrots, cucumbers and croutons. Nice and crisp and refreshing.

For the main meal I went with the chicken BLT. This came with grilled chicken, bacon, lettuce, and tomato on toasted wheat bread. This was a really good light and refreshing sandwich. The bacon had a nice smoky flavor to it that worked really well the sweetness of the tomato. The chicken had a perfect texture and was cooked very well. I am pretty sure that the bread was buttered which gave a richness to the entire sandwich that was subtle but delicious. I really enjoyed it.

For the dinner service, the restaurant is a fine steak house with offerings including trout, ribs, chops and steaks. If you are looking for dinner you best plan ahead though. Reservations are required for the evening service. If you find yourself in Nathrop and are looking for a great meal, give Mary Murphy Steakhouse a shot.

The Mary Murphy Steakhouse is located inside the Mt. Princeton Resort in Nathrop, Colorado on County Road 162. The resort has a hotel, hot springs, a restaurant and a conference center and good amount of parking.
