WildEdge

The WildEdge is a brewery in Cortez, Colorado. The people I met in Cortez, Lauren and Sam, who I went on a hike with told me that I just had to give it a try as it was one of their local favorites in town. While it is known as a brewery they do have a food menu that rotates seasonally. The afternoon that I was there the WildEdge also had a local musician inside and some sidewalk seating in the front of the brewery.

The Food

This blog is all about the food so that is what I will focus on. The WildEdge has mostly finger foods like Soft Pretzels and appetizers available. I decided to give the Beer Cheese Nachos a try. The nachos were the perfect size for one or could be shared with a combination of some other apps. These nachos were really good! The beer cheese was delicious, and I have spent enough time in Wisconsin to know my beer cheese. The highlight for me was the pickled slaw which had a nice sweet flavor to contrast the savory of the cheese.

My local guide Sam told me that I couldn’t stop there and that I had to try the Chilaquiles as well. Never being one to disappoint I took him up on the challenge. I actually had no idea what Chilaquiles were but they turned out really good as well. The Chilaquiles looked a lot like nachos but the chips were really soft. They were topped with the slaw, pickled jalapenos, salsa roja, queso fresco, with a lime crema drizzle. The drizzle was great and overall the flavors blended together really nicely. A little bit lighter than traditional nachos and with the softer texture.

Overall, I was really impressed with the snacks at WildEdge. They also had a really nice selection of beers if that is your thing. If you find yourself in Cortez, give WildEdge a shot!
