Two Chicks and a Hippie
I am not going to lie. I had to go to Two Chicks and a Hippie for the name alone! The restaurant serves breakfast and lunch and is also a bakery and coffee shop. I visited on a Saturday morning and there was a line that stretched outside so I knew I picked the right spot on my first trip to Pagosa Springs.

The Food
The line moved fast as there is indoor and outdoor seating. I got a table inside and it was time for the important part…the Food! I settled on one of my all-time favorites, Corn Beef Hash. The meal was house braised corn beef sauteed with potatoes, fresh onions and peppers seasoned with oregano and black pepper. Plus, two eggs which I had over-easy. I may have also added a side of bacon for good measure.
All of the food was fresh and I could taste that the corn beef was home made. There were big chunks of beef instead of being diced super small. I really liked that. It felt like you were getting a mouthful with each bite. The onions and peppers were also really fresh and tasted great. This was a really good Corn Beef Hash, one of my favorites. The bacon was also really thick cut and a bit chewy which is the way I love it. All and all a great breakfast with a great name!

Two Chicks and a Hippie is located at 117 Navajo Trail Drive in Pagosa Springs, Colorado. It is on the corner of a small strip center just off of US-160. There is indoor and a bit of outdoor seating.
