Chavalo’s Mexican Restaurant

If you find yourself in Mancos, Colorado, possibly driving between Durango and Cortez, make sure to stop and enjoy the town a bit. It is really nice, has a state park and some really good restaurants. One of those is Chavalo’s Mexican Restaurant. Located just off of 160 in the heart of the town. Chavalo’s is open from 10 am to 9 pm everyday

The Food

Now to the important part…The Food! I have become a big fan of Mexican Food on my journeys and this was no different. The meal started with the traditional chips and salsa and then I went with the Huevos Con Chorizo.

The chips and salsa were really good. The salsa was thick and full of big chunks which is my favorite way. There was a bit of spice but nothing overwhelming. Just a nice heat and flavor. There was also plenty for all of the chips.

Next up was the Huevos Con Chorizo. The eggs were really nice and fluffy. They had a great texture and I enjoyed them. The Chorizo was flavorful but again, not too spicy. They mixed in onions which gave the whole thing a corned beef hash feel to it. I really enjoyed it and it was the perfect post hike brunch! If you find yourself in Mancos, give Chavalo’s a shot!

Chavalo’s Mexican Restaurant is located at 121 Railroad Avenue in Mancos. There is a small service road off of 160 that you turn onto and then there is parking in front of the restaurant.
