Vallarta’s of Craig
Vallarta’s of Craig is the restaurant on top of the hill on the western side of US-40 in Craig. They serve traditional Mexican fare and had some of the nicest waitstaff. They were all super friendly and I had a great time spending sometime and eating and hearing about all there is to do in Craig. Plus, I got to share my hiking knowledge with some of the staff that was going to college in other parts of Colorado. A very fun experience!
The Food!
Now to the important part…The Food! Vallarta’s had a full array of Mexican styled dishes available and I went for one of my all time favorites, the Fajitas. After a long day of hiking, there is just something magical about that sizzling plate walking your way. Vallarta’s offering had a ton of meat and veggies with big chunks of peppers and onions. It also came with rice, beans and a bit of salad to add to the tortillas.
I really loved that the veggies came out in bigger chunks instead of sliced so thin that they stick to dish. They were also super fresh and tasted delicious. The meat was also flavored really nice and I liked the way that it was cooked. It was wasn’t chewy but also not mushy at all. The steak held its shape but broke apart nice and easy with each bite.
I could have gone with a bit more when it came to the sides, as I ran through them pretty quick. But they were good and flavorful. The salsa was also nice and chucky with a medium heat that I enjoyed. Overall a really nice meal and perfect after a long day of hiking. If you find yourself in Craig, give Vallarta’s of Craig a shot.
Finding Vallarta’s of Craig
Vallarta’s of Craig is located at 2705 W Victory Way in Craig. It is right next to US-40 but you can’t get there from 40. Instead have to drive next to the gas station to get up to Victory Way. There was plenty of parking and indoor and outdoor seating.
