I found JJ Madwells by complete accident but I sure am glad I did. This was one of the best cold sandwiches I have ever had.
Waterton Tavern
Close to Waterton Canyon and Roxborough State Park is Waterton Tavern. A nice locally owned tavern that got me hooked with the fried mushrooms and left me thinking of the house special coleslaw.
